Villalmanzo is a town in the area of Arlanza , in the province of Burgos. It dates back to the Middle Age and it was founded during the Mozarabic repopulation of the middle and low Arlanza, after the year 912, when the Christian line of defence was taken to river Duero.

It has a rich gastronomy where the most remarkable dish is the typical “chumarro”, consisting in big pieces of hasty cod, grilled on vine shoot, and then crumbled and boiled with garlic. The most traditional products are “churrillo” wine, “morcilla”(made with rice) and roast lamb in bakers oven. Other very typical products are the “magdalenas”, “emes”, “mantecados” and oil bread.
